Knowledge doesn't equal experience
Nothing trumps experience. It takes practice on a weekly, even daily, basis to hone your craft or skill. It's not rude to ask how many years of experience they have. But you should realize that it's difficult to quantify experience by years. However, over time every photographer should give consistent results for their skill level. Beginner photographers lack the ability to walk into any given situation and be able to make a photograph. Experienced photographers can change any location into something beautiful for portraits.
The photographer that you hire should have several locations in mind based on what you're looking for. Natural, Urban, indoors, or outdoors. They should be able to recommend a few places and be able to shoot it.

Creatively use light
Photography is simply the capturing of light onto paper. Some light is better than others. Every photographer loves to shoot in golden hour, the magical hour just before sunset or just after sunrise. The light is softer and creates beautiful imagery. But it's not feasible for every shoot to take place during those times. What if the only available time is in the middle of the day with harsh sunlight? They should also be able to use that light to create flattering light.
These 2 images were created within a few minutes of each other. Same location, almost identical light. Each moment of light is different.
These images were taken indoors at different times of the day. One used flash and one was simply natural window light.
A camera is just a tool, but knowing which tools to use and when is what a professional does. Each piece has a purpose. Each button changes how the tool works and what the result is. Sometimes all you need is a camera other times it requires light stands, reflectors, and flashes.
Professional Quality Print Lab
After spending time getting outfits coordinated, location and time chosen, now it's time to see it in print. Getting high quality prints, canvas, or album is part of the process of a photoshoot. Surely you want to see these beautiful images everyday or be able to find them to share with guests in your home. Your photographer should have access to a Professional Print Lab that will deliver these images that you've invested in into products that will last a lifetime. Professional photographers take time to calibrate so that what you see on your screen is what comes printed on your product. When you take a digital file and print it elsewhere, the photographer has not taken this step to calibrate so the colors will likely be off or different from what you see on your screen. For best results, order through your photographer and their professional print lab.
Every professional relationship between you and a vendor or contractor requires a contract. All this does is make sure there are no surprises for either party involved. A contract is there to protect both the consumer and the business from any misunderstandings. A typical contract will outline the details of the shoot hired for. It will include pricing, payment due dates, location and time of the shoot, deliverables, as well as policies regarding refunds and rescheduling. Make sure you read through everything and ask questions prior to signing. Having a contract with your photographer is a sign of their professionalism.
